Okay, I did it again. I came up with the most delicious brunch item using leftovers in my fridge. It started with five MorningStar Farms® Veggie Sausage Links that was leftover from Breakfast dinner (See earlier pancake recipe). So I crumbled them up in a cast-iron pan with ¼ chopped Vidalia onion and a chopped up Roma tomato and a splash of EVO. I cooked all this till the onion started to caramelize then set aside in a bowl. I then took two tortillas, put strips of Brie on them and heated them in the pan. I set those on a plate and scooped the meatless sausage mixture on top. I placed two eggs over easy on top of that and served with my homemade Guacamole (recipe to come) and Hatch Fire-Roasted Green Chile Salsa. Oh boy that was good.

Note: To Veganize this dish use a vegan sausage Like Gimme Lean® Sausage since MorningStar Farms® uses egg whites in theirs and make a tofu scramble or a thinly sliced tofu steak for the egg.
