I woke up this morning and I was craving a pastry, but all we had in the house was cereal and I just couldn’t do another day of Peanut Butter Puffs. I started scrounging around and I found a Granny Smith apple in the fridge and some leftover tortillas from taco night. I remembered my mother used to make blueberry blintzes in the morning that were to die for, so I started to craft my breakfast. I cut up the Granny Smith apple into thin slices and threw that in a saucepan with some Earth Balance® Natural Buttery Spread (I prefer this over butter because I like the flavor better). I started to heat this together on a medium heat with a little bit of apple juice, I also tossed in a few fresh raspberries that I had on hand. I sprinkled in some cinnamon, some brown sugar and a sprinkle of vanilla extract. Cooked all the ingredients down and set aside. I heated up a wheat tortilla in the toaster oven and spread a little bit of organic cream cheese (Farmer’s cheese or crème freche may work nicely as well) over it, then put the apple mixture on top. To finish it off, I drizzled on vanilla So Delicious® Coconut Milk Yogurt and a very light sprinkle of cayenne pepper, folded it over and dusted it lightly with powdered sugar and cinnamon. It definitely cured my pastry craving and it added a little spice to my morning too!
